New address for each transfer? (Reddit Bitcoin)

Hello,
I keep reading about creating a new address for every transfer you do?
Example,
You buy $100 BTC on Coinbase.. send it to your Trezor.
The next time you do this, make sure you don’t use the same Trezor address so that you can’t be traced?
Does Trezor create a new address for you if you want to do this?
How do I know it won’t go to the wrong address?
